A Northern Italian experience: Chef Stefano Merlo at Favola, Le Meridien Kuala Lumpur

There once was a chef from Venetro
His name is Stefano Merlo

And verily every dish was gold.

Chef Stefano Merlo the executive chef of Rossini’s (an award–winning Italian restaurant at Sheraton Grand Sukhumvit, Bangkok) is this week’s guest chef at Favola, Le Meridien KL. Originally from Northern Italy, he went to work in the kitchens at 15 (“I wazz a naasty student”) and discovered a passion for cooking. So he took it seriously, sought to learn from Michelin star chefs, went to work in Australia and taught himself English, went to Japan and ate a lot of Japanese food, I’d imagine… and now he’s in Bangkok. Well technically at the moment he’s in KL but you get the idea.

We were at the beautiful Favola, Le Meridien KL for a special preview of Intriguing Italian with Chef Stefano Merlo. He showed us how he crafts three different dishes that is highlighted during his week-long stint in KL, namely Artichokes Frittata, Seafood Risotto and Milk Risotto with Cherry Parfait.

… It was a bit nuts, I tell you…! The man blends cooked eggs then subjected them to a high pressure pump of sorts. He showed us how much butter goes into making the BEST al dente risotto ever (“buuut I don’t eeet a lot of butter, haha I usually eeeeet more olive oil”). He made foam out of seafood stock and lecithin. He made dessert out of risotto and added cherry parfait (made with Pacojet) and presented it with a flourish. Then he apologised, saying he wasn’t feeling very well that morning.

Sigh. He was sick yet he could still come up with all those wonderful things. No words in the dictionary could describe how inadequate I felt.

The frittata was soft, fluffy and precious. The seafood risotto tasted like it contained the essence of the ocean. The milk risotto was extremely comforting and tasted exquisite when taken with the slightly sourish cherry parfait. The care and attention that went into the preparation of each dish showed in the end (very delicious) result.

A la carte menu starts from RM30, a 4-course set menu is at RM300 and with wine pairing, RM450. His last dinner services at Favola this time round are Friday (20th April) and Saturday (21st April), I highly recommend this gourmet experience to you.
